So quite a few of my meals take shape WHILE cooking, not before (this tends to happen a lot without recipes), and this one is no exception. Originally I just wanted some udon…and then I got carried away. Kind of an everything-but-the-kitchen-sink/throw-everything-in-one-pot-and-see-what-happens meal. But still good. Add the vegetables late to retain a bit of freshness and crunch. Stir in the egg at the very end. Yumness.
