Huevos Rancheros: Breakfast…Mexican style!

  • Corn tortillas
  • Diced green chilies
  • Tomatoes
  • Onion
  • Garlic
  • **Special ingredient(s): Ground beef (I always gotta have a little meat) and cheese (curiously, Mexicans don’t usually put cheese on this).

The past few weeks I haven’t been waking up for breakfast, so why not have it for dinner? Hence the huevos rancheros. Didn’t have any refried beans to go with it, but whatever. The tricky part is having all three components, tortillas, eggs, and salsa all hit the plate at about the same time. Over time, the tortillas tend to get soggy/lose their crisp, fried eggs firm up and get rubbery, and the salsa gets mushy. It’s a juggling act. If you’re good at juggling, you get yum.
