Thai? quesadillas:
- Tortillas
- Sharp white cheddar
- Tomatoes
- **Special ingredient(s): Baby bok choy, green onions, spicy peanut sauce (ginger, Sriracha hot sauce, peanut butter, sesame oil)
Getting home from work at 8 calls for a quick dinner. And there’s nothing quicker than quesadillas. And…I don’t. Even. Know.
“Baby bok choy in a quesadilla? What is he doing?”
“I don’t even know, Beatrice.”
“But peanut sauce, Andy?”
“Beatrice, I already told you. I have no idea what’s going on.”
This was mindblowing (no, go away, I am NOT talking about Inception). Prepare quesadilla as usual. And then it gets crazy. Sprinkle green onions and layer baby bok choy leaves over the tomatoes. And then whip up some peanut sauce. (This is so not a typical quesadilla ingredient.) Smooth or chunky peanut butter, it doesn’t matter. Everyone loves peanut sauce. And if you have white friends, you can go light on the Sriracha. Unless you’re like me. (Schadenfreude, baby!)
These were surprisingly good. B+.
